My first glass of wine in life was back in 2006. I kind of liked it but not up to wine appreciation. I still remember I could NOT accept white wine until couple years later. Probably my first sip of white wine was awful, it destroyed the impression.
I could have never imagined 10 years later I would say something like “ I can’t live without it”. The ‘it’ here literally refer to Georgian Qvevri white/orange wine. Unlike wine from any other countries, my affection towards this wine attaches with varies characteristics . I am aggressive when I see this wine, I want to get them all home. I am single-minded when I have to choose between this and any other white. I am stingy when I have to open a bottle because most of the time I only have one of each. I am extremely picky on choosing the occasion, the company ,the food, the atmosphere to go with this wine, pairing in all aspect need to be perfect in order to eliminate any chance of ruining the wine. I am thankful when I am enjoying the wine, for the people who make such a good wine, for god blesses the tiny piece of Georgian land with great viniculture.
Every bottle just brings me three stages:
Before– looking forward and expecting to be surprised.
During– the liquid just brings me to the world of fairy tale.
After — feeling down as my collection getting smaller and smaller.
So what are the wines led me to an addict? Here comes some of my recommendation:
第一集: NAOTARI Qvevri Natural Wine ~3 種葡萄的結合與BBQ之火花
NAOTARI Qvevri Natural Wine Rkatsiteli, Khikhvi, Kisi white dry 2013
The aromatic signature is distinctive, full of ripe apricot and a subtle wild flower. Moderately tannic, crisp acidity, with impressive flavours of honey and orange peel. The mineral is quietly bubbling.
My Picky Pairing: Occasion: Xmas eve. Food: BBQ . Accompany: Person who is picky on wine. Atmosphere: Wild romantic
It goes very well with steamed clams in garlic, sip it with a palate full of garlic flavour, I felt I was eating a chicken in ginger and green onion sauce. (Well, food pairing is always a magic, believe it or not?). When it comes to red meat, the skin contact gives the Qvevri wine a good tannins to balance out the fat. My piece of meat was NOT fatty though.
它與蒜蓉蒸蜆非常配，用那滿滿大蒜味的舌頭去品嚐此酒，我覺得我在吃薑蔥雞! （Food pairing 就是一個magic! ）。至於那件燒牛，白酒可配紅肉??因發酵過程保留與葡萄皮接觸，所以這Qvevri wine 單寧像 Pinot noir，正好平衡牛排的油脂。可惜，我那塊肉沒多少脂肪。:)
My Wine Fairy Tale: Tinkerbell cave party.
I bought this in April in Tbilisi and carried them all the way to Hong Kong, before opening it, my expectation was pretty high, because owner left me a message on Facebook saying something like ” You will be surprised”. Turned out, it was way better than I thought. I yelled “Look at the color!” upon pouring it. I screamed “What a fruity floral” when I smelled it. I said no word but just smiled upon sipping it. It is my favourite so far!! OMG, the feeling was like hundreds of Tinker bell flying around with a tiny glass on one hand and a fairy stick on another hand. They look so exciting with the turbo wings clapping. All of a sudden , a Tinker bell with big belly and full beard, holding a wine port and sprinkle his fairy dust to a clay jar which buried underground, the orange wine from inside pushing up the lid to the sky and all Tinker bell rushing to the pillar of wine to fill their glasses.
還記得當日這瓶酒讓我十分興奮，未開前巳十分期待，因為wine maker Rezo 之前在我Facebook留言說 “飲過你就知”，大口氣吧? 開瓶至第一啖那一分鐘間，我大喊了兩句：“你睇下呢隻橙色靚到呢！”um…勁香，真係好香”。第一啖，我沒說什麼，只是會心地笑了。難怪Rezo 這樣說。後來，我回他一句，”I can totally understand why are you so proud of it.”
那是一支非常平衡亦兼備特色的酒，讓人有愈飲愈想飲，”掙住飲” 的歡愉感覺。當時的感覺就像數百隻Tinker bell 在開cave party，一手拿着小酒杯，一手拿着神仙棒，興奮地飛來飛去用。突然，一個大肚滿面鬍子的老Tinker bell來到，他那神仙棒向着一個埋在地下的陶缸一揮，pang 一聲, 橙色的葡萄酒把蓋沖了上天，全部Tinker bell 即時向酒柱飛去，搶著把酒杯填到滿滿的。
這是我到目前為止最喜歡的 natural Qvevri orange wine ！
